Sweetcorn Fritter with Feta and Sweet Chilli dressing

- 200g plain flour
- 2tsp baking powder
- pinch smoked paprika
- 3 free range eggs
- 150mls milk
- 400g of sweetcorn kernals
- 6 spring onions finely chopped
- 200g feta cheese
- 8 slices of streaky bacon
oil for frying
For the dressing
- 2 tbsp sweet chilli sauce
- 1 tbsp olive oil
- 2 tbsp white wine vinegar
- 2 spring onions finely chopped
Rocket to serve
- First make the dressing.
Place sweet chilli sauce in a bowl and gradually whisk in the olive oil. Finally stir in the vingar and chopped spring onions
set to one side.
- For the fritters.
mix the flour, baking powder and paprika in a bowl. season the mixture and add the eggs and milk to the flour then carefully whisk everything together.
- Place the sweetcorn and spring onions in a bowl and add just enough batter to bind them.
- Heat the oil in pan and add spoonfuls of the mix to the pan to make little fritters. Cook them for two mins on each side, drain on kitchen paper and
keep warm until all the batter mixture is used up.
- Cook the bacon until crispy.
- Place two or three fritters on a plate, crumble over some feta. Top with two pieces of bacon and a drizzle of dressing.
