Apple Chutney

Put apples, onions and sultanas in a pan. Juice the lemon, grate the rind, and add both to the pan, with the sugar and vinegar. Bring to the boil, reduce the heat and simmer until the mixture is of a thick consistency, with no excess liquid. Pot and cover in the usual way. Makes about 1.8 kg (4 lbs) This is a light chutney, fruity but not spiced, good with pork and poultry.
